The broth with a savory rich flavor goes well with Chinese, French and Italian food, it makes a healthy dish even if salt and other seasonings are less than usual. Our developed ”Shigure-shiitake-WABI(Donko)” is a luxury delicacy which uses a smallish Donko made in Japan simmered with a large cauldron. This luxury delicacy is made by scallop and kelp broth based on soy sauce that goes perfect with tea as well as wine and alcohol. High-quality Japanese Wagashi (sweet) that is cooked with Yuzu flavor and sweetness is also popular.
