Chirashi-zushi is a type of sushi where ingredients are scattered over sushi rice. It is garnished with a colorful array of sashimi, seafood, and vegetables scattered on top of the sushi rice, then topped with items like seaweed, omelet, and shredded nori. Chirashi-zushi is a vibrant dish, making it a popular choice for celebratory occasions.

This time, we’ll introduce a recipe for Salmon Chirashi-zushi using our recommended sushi vinegar!

【Instructions】

1.Cook the rice slightly firm. Once cooked, transfer the rice to a large bowl, spread it out lightly,
and add finely chopped ginger, finely chopped shiso leaves, and white sesame seeds. Drizzle
black sushi vinegar evenly over the rice while mixing gently with a spatula, then cover with a
tightly squeezed damp cloth. (To prevent the rice from becoming hard)

2.Season the fresh salmon with salt and grill it. Remove the skin and bones, then roughly flake the
salmon.

3.Make the shredded omelet.

4.Serve the sushi rice in individual bowls or on a large platter, then scatter the salmon and
shredded omelet on top to complete the dish.

We recommend using Fukuyama Kurozu’s Black Sushi Vinegar for this recipe!

Fukuyama Kurozu is a company based in Kagoshima Prefecture, Japan, known for producing black vinegar using traditional manufacturing methods and unique fermentation techniques. Black vinegar is a sour seasoning made from ingredients such as brown rice, glutinous rice, or other grains, which undergo a long fermentation process to develop its distinct flavor.
Black vinegar is a nutritionally rich and popular health beverage as well!
Fukuyama Kurozu’s Black Sushi Vinegar, compared to rice vinegar, contains abundant amounts of “D-amino acids,” which are also umami components. This richness in D-amino acids contributes to a reduction in saltiness, resulting in a delicious flavor profile!
