Fumimoto Brewery, a 120-year-old institution and the last sake brewery in Kochi Prefecture, embodies the essence of the Shimanto River's terroir. Our expertly crafted sake results from a harmonious blend of local rice, the river's clear waters, the region's warm climate, and our artisans' unparalleled skills. In 2023, we innovatively transitioned to spout packs, enhancing safety, reducing storage issues, and maintaining the high quality of our sake, even when frozen. This change addresses transportation risks and ensures product integrity. Our small-batch production approach sets us apart, allowing for special orders and customized brews to suit unique preferences and occasions. Embracing tradition and innovation, Fumimoto Brewery offers a taste of Kochi's unique character in every sip.

At Fumimoto Brewery, we've taken the road less traveled in sake production, opting for locally grown rice instead of the standard sake rice. This innovative decision enriches our sake with an exceptional sweetness and robust aroma, showcasing the natural character of Kochi's rice. By focusing on natural ingredients without additives, we craft a sake that's a true expression of Kochi's terroir. Our production, limited to just 500 liters monthly and entirely handcrafted, makes each bottle a rare embodiment of our dedication to quality and uniqueness.

Junmai Daiginjo [Pasteurized] "SHIMANTO" BLUE label

[Alc.16%] Rice polishing ratio: 50% Junmai Daiginjo is brewed with delicious Nikomaru rice from Shimanto Town Just the right amount of refreshing scent that doesn't interfere with cooking A well-balanced taste of umami and acidity A refreshing aftertaste that makes you want to have another drink.

SHIMANTO"HANAYAGI"

[Alc.13%] Rice polishing ratio: 70% A sophisticated sake with a pleasant fragrance and subtle sweetness from the local brand rice "Niita Rice". It has a sweet strawberry-like aroma and pleasant sweetness from the rice, but has a refreshing aftertaste. Recommended for a gorgeous drink with like-minded friends, or as a time to soothe your body and mind at the end of the day.

Junmai Daiginjo Nigori [Pasteurized] Kiri no Sato

[Alc.16%] Rice polishing ratio: 50% “Nigori Sake” is a Junmai Daiginjo brewed with delicious Nikomaru rice from Shimanto Town. Not too strong, smooth and pleasant nigori sake Just sweet enough, not too overpowering, making it a nigori sake that pairs well with meals.

Amazake of the brewer

Non-alcoholic rice malt amazake made from the same ingredients as Junmai Daiginjo “SHIMANTO” and “Kiri no Sato” The refreshing taste and natural sweetness produced by Niita rice is a new sensation that you will never get tired of. This highly nutritious rice koji amazake is often referred to as 'liquid nutrients. It contains soluble and insoluble dietary fiber, promoting active bowel movements and regulating the intestinal environment through oligosaccharides, a type of carbohydrate.
